Tips on homemade aloe vera gel.

  ■ Important ■

If you notice, the main difference between fresh aloevera gel & market aloe vera gel is it's consistency & color. In market aloe vera gel, green color is added & at times food grade green color is used. However, if you have noticed fresh gel is always colorless. It is odorless too. Aloe vera gel bought from market may contain various things like vitamin E, liquorice powder, saffron etc. You can always add these things to the recipe described here in this article. For gel like consistency, you can add gelatin or agar agar. I find agar agar more safe as compared to gelatin and also it can be used by all that is vegetarian & vegan people. Now, for those who are not aware of agar agar, let me tell you that

"Agar-agar is a jelly-like substance, obtained from red algae Agar is a mixture of two components: the linear polysaccharide agarose, and a heterogeneous mixture of smaller molecules called agaropectin. It forms the supporting structure in the cell walls of certain species of algae, and is released on boiling. These algae are known as agarophytes, and belong to the Rhodophyta (red algae) phylum.

Agar has been used as an ingredient in desserts throughout Asia, and also as a solid substrate to contain culture media for microbiological work. Agar can be used as a laxative, an appetite suppressant, a vegetarian substitute for gelatin, a thickener for soups, in fruit preserves, ice cream, and other desserts, as a clarifying agent in brewing, and for sizing paper and fabrics.

The gelling agent in agar is an unbranched polysaccharide obtained from the cell walls of some species of red algae, primarily from tengusa (Gelidiaceae) and ogonori (Gracilaria). For commercial purposes, it is derived primarily from ogonori. In chemical terms, agar is a polymer made up of subunits of the sugar galactose."

"Agar-agar is a natural vegetable gelatin counterpart. White and semi-translucent, it is sold in packages as washed and dried strips or in powdered form. It can be used to make jellies, puddings, and custards. For making jelly, it is boiled in water until the solids dissolve. Sweetener, flavouring, colouring, fruit or vegetables are then added and the liquid is poured into molds to be served as desserts and vegetable aspics, or incorporated with other desserts, such as a jelly layer in a cake. Agar-agar is approximately 80% fiber, so it can serve as an intestinal regulator. Its bulking quality has been behind fad diets in Asia, for example the kanten (the Japanese word for agar-agar) diet. Once ingested, kanten triples in size and absorbs water. This results in the consumers feeling fuller. This diet has recently received some press coverage in the United States as well. The diet has shown promise in obesity studies."

"Agar-agar, sometimes referred to as China grass, kanten, or just agar, is a gelatinous polysaccharide derived from red algae. Agar is used to gel many food products, such as puddings, desserts, jelly candy, soups, sauces, and more. It is a popular vegetarian alternative to gelatin. Vegetarians and vegans do not use gelatin because it is made from animal bones, skin, and connective tissue.
